The Story

This is a compact and simple charcoal grill made from diatomaceous earth, a natural material known for its excellent heat retention. This model includes grill nets (ami) for general-purpose grilling. Use this with charcoal (Binchotan) to grill meat, seafood, vegetables, and more.

Grilling over charcoal adds a distinct smoky flavor that cannot be achieved with other cooking methods. The far infrared heat generated by Binchotan allows food to cook quickly while retaining moisture, resulting in a crisp exterior and juicy interior.

Unlike bar-style konro grills, this model uses a mesh cooking surface, making it suitable for a wide range of ingredients. The side handles allow for easy transport, and the three ventilation windows can be used to control airflow and heat levels.

Instructions
  • Important Note on Airflow: To protect the grill's structure and prevent exterior cracking due to heat buildup, please allow at least 6-8 inches of open space around a single grill and 12-16 inches between multiple grills or other heat sources. Adequate airflow is essential, especially in enclosed kitchen spaces.
  • Use this grill only in well-ventilated areas. Burning charcoal produces carbon monoxide, which can be hazardous in enclosed spaces.
  • Place a wooden mat or other heat-resistant mat under the grill, as the bottom surface can become extremely hot during use.
  • Do not extinguish the fire with water. Diatomaceous earth will absorb water, become brittle, and lose durability.
